Peanut butter cookie recipe.

Hi everyone, today I have a new recipe to share with you as I haven't done one for ages! This recipe combines 3 of my favourite things: Peanut butter, Chocolate and cookies and they are so quick and easy to make! Plus they make a great post workout snack or even as a breakfast snack with a smoothie!





Ingredients:
  • 60g (2/3 cups) of Oats.
  • 90g of Sugar.
  • 1 teaspoon of Baking Soda.
  • 1 Egg.
  • 250g (1 cup) of Peanut Butter.
  • Spices. I used about 1 teaspoon of cinnamon, a pinch of ground ginger and a pinch of nutmeg. (These are optional, and feel free to add as much as you like).
  • Chocolate. (Again optional, and I used dark chocolate).
Method:

1. In a bowl mix the oats, spices and baking powder together.

2. In a separate bowl beat the egg and then mix in the peanut butter and sugar.



3. Pour in the dry ingredients to the peanut butter mixture and then fold in the chocolate. I'd recommend using chocolate chips, as I used a large bar of chocolate and it was quite hard to chop into small pieces.

4. After everything has been mixed together you need to chill the dough for about 30 minutes, to help it firm up so they are easier to form into balls. I have also left them for only 15 minutes before and they were fine.

5. Whilst chilling in the fridge preheat the oven to about 180.C and line 2 baking trays with baking paper.

6. After the dough has chilled roll out into little balls and place onto the baking paper. I also like to press down on the dough with a fork to add a nice pattern and to help flatten the cookie out.

7. Now all you need to do is bake them for about 10 - 12 minutes depending on how crunchy you want them to be. I prefer my cookies softer so I only cook them for about 10 minutes.

Once out of the oven leave them to cool and then they are ready to eat! 

See I told you they were easy, and they are super yummy too! Also you can add other ingredients such as nuts and chia seeds to make them extra tasty and healthier! 

Plus if you take out the chocolate and the spices they make great dog treats which my dog loves, so I always make two batches!
